When we first launched Hidden Apron in New York City all those years ago, it was meant to be an ongoing statement. A reminder to the well-known but oft-forgotten power of food to bind us together. Practically speaking, it was also my attempt to rebel against the rigid circumstances I was dealing with as an immigrant tied to a work visa in the United States. Since then Hidden Apron has explored private catering, podcasting, food writing, championing a more expansive definition of Filipino food, and of course, the pop-ups that we remember and are asked about the most to this day.

Life inevitably happens and the original crew has now dispersed around the globe. Some have gotten married. Some now have kids. I myself now live amongst the canals of Amsterdam in a weird twist of fate. Hidden Apron can’t go back to existing the way it did before and we aren’t sure what’s next. If you’re new here, welcome. This is now a tribute to those early years. If you’ve broken bread with us before, welcome back. May this bring you warm memories of long meals and longer conversations. Until we break bread again…

Who We Are

We’re an odd collection of day-jobbers, freelancers, students, parents, and side hustlers. We’re regular people who can’t quite fit into regular boxes. We’re fellow travellers whose paths happened to cross over dinner tables.

Why We Do It

The Hidden Apron story has changed over the years: creative escape from corporate monotony, experiment to get ordinary folk cooking more, an excuse to spend time with each other over food…we’re still figuring it all out.
